BALANCED BOWL SERIES Day 5u002F10 - Chicken Hokkien Noodles Ingredients: Serves 4 1 tbsp olive oil 1kg chicken breast, sliced 1.5 440g packs of thick Hokkien noodles 2 bunches of choi sum 2 cloves garlic 1 egg Sauce 1u002F3 cup oyster sauce 1u002F4 cup soy sauce 1u002F4 cup dark soy sauce 2 tsp sugar 1 tsp sesame oil Instructions Cut Choi Sum into pieces. Separate leaves from stems. Prepare noodles according to packet instructions Sauce - mix ingredients until sugar dissolves. Heat oil in a very large pan or wok over high heat. Add garlic and cook for 15 seconds then add chicken. Add a few spoonfuls of the sauce. Cook until chicken changes from pink to white. Remove chicken and set aside. Add Choi Sum stems, cook for 30 seconds. Add Choi Sum leaves, cook until just wilted. Push everything to one side, crack egg in and scramble. Add chicken back to the pan, along with noodles and Sauce. Toss as few times to ensure everything is well coated. Enjoy!
